棋肉是越南出产的特殊沉香品种，外观与色泽与红土蜜香接近，但味道清凉，有西瓜香味，具有极强的穿透力。与红土蜜香有明显的差别，质地坚密。许多棋肉尾根部结香呈圆柱状、多开叉的特征。因其味道特殊，而较红土蜜香有更多“肉”材，所以刚出现在台湾香界时被命名为棋肉，后便约定俗成了。应该是一个独立优秀的沉香品种，在形体与香味上都有特征可以被区分。
