Provenance: Dr. Venancio Augusto Deslandes (1829-1909, decorative bookplate with motto "Semper honore meo").FIRST EDITION. This publication led to the widespread practice of heat sterilization of wine and vinegar. "Although Pasteur's method of preserving wine by partial heat sterilization ('pasteurization') turned out to be a revival of Appert's invention, Pasteur did rescue the method from oblivion and established on the basis of rigorous scientific experiments what had been only a poorly tested and entirely empirical technique" (Garrison-Morton 2479).
